Part One - The wine. Basic lessons aimed to the selection, evaluation, tasting, service and matching of various kinds of "labels". There are also suggestions and advices for the formulation of a "wine list" for the seasonal management and rotation of the proposals.

 

Part two - Techniques of confrontation and dialogue with the customer, personnel and staff management, organization and  technical service at the counter and the table, setting up the workplace, furniture and decoration of the rooms and professional clothing.
